Bushels, also referred to as 'food', are Earth: Empire's main source of acquiring liquid assets (stocking). Bushels are a very important source of income for certain countries, and a precious commodity to others.
Without bushels, a country that is consuming more food than it is producing will not survive for long. Each turn without remedying a food shortage will result in military units deserting your army, interrupt multi-turn operations--such as exploring or building (it will NOT interrupt turns used in attacking)--, and cause a drop in your country's PCI. It is best to calculate just how much food there is on hand, and how much is being consumed per turn, before running any batch of turns.
Bushels are often surplussed and sold on the market by countries running a Farmer strategy.
Bushels affect a country's networth, in a magnitude of 1/20000. This means that it takes 20 thousand bushels to equal 1 dollar in networth.
